Sorry, I have been away for so long. Life has been a whirlwind since the beginning of September. We found out DH was starting a new job, back in St. Louis - WOHOO! We moved into an extended stay for a few months. The kitchen was, lets just say, less than desirable. DH said he felt like a bull in a china shop when he was cooking. Then the beginning of December we were blessed with a friend's condo.
Last year I made the meals and then commented on them. This year I decided I would just make and then comment later. It seems easier to me. I hope you agree. Otherwise, you would have had to wait another week for a post.
Here goes!
- Sunday: Hamburgers
- Monday: Tacos with Mexican Rice
- I didn't make this rice. I made my variation which is....rice, salsa, cumin, salt, mexican cheese.
- Tuesday: Slow-Cooked Bolognese Sauce
- This was yummy...
- Wednesday: Chorizo-Potato Frittata
- This wasn't worth my time nor the money I paid for the manchego cheese. DH said it wasn't bad, I thought it was yuck! There was barely any flavor, the potatoes didn't cook all the way, & the eggs were mealy.
- Thursday: Baked Paprika Parmesan Chicken
- Friday: Homemade Pizza
- Saturday: Porksteaks with potato salad
