What is for Dinner This Week: June 19 - June 25

Howdy Everyone!
This week is a very special week for us...Little Man turns 3 on Wednesday.  I can't believe he'll be starting preschool this fall.  Since it is a special week, we have lots of family coming in to visit, so we wont be eating our typical out of the box meals....I hope you enjoy this weeks menu plan!

  • Sunday (Happy Father's Day):  Breakfast @ Big Man's Fave Breakfast Restaurant....Dinner: Smoked Meat of some variety and sides
  • Monday: Pork Chops, Rice Pilaf  & Vegis 
  • Tuesday: Burger Bar, broccoli slaw, Macaroni & Cheese, Baked Beans
    • onion/caramelized onion, roasted red peppers, tomato, lettuce, buns
    • pesto, quac, mayo, mustard, ketchup, BBQ sauce
    • Swiss, American, Pepper Jack, Mozzarella, Gouda, Cheddar, Colby Jack Cheese, Bacon
  • Wednesday:  Out to Dinner for Little Man's 3rd birthday 
  • Thursday:  Tacos & Mexican Rice
  • Friday: Brick Chicken 
  • Saturday: Lasagna, Garlic Bread & Salad
Last Week's Update:
  • Pasta with Pesto Cream Sauce: We had pesto pasta without the cream sauce....YUM!!!!  Fresh pesto is sooo much better than store bought!
  • Chipotle Corn Burger: We had pesto burgers instead, and they were yummy to our yummy!
  • Pancakes & BaconYUM as always
  • Chile Chicken With Fries: We didn't get around to making this....maybe another time...
  • Austins Restaurant: This was yummy, we all had the prime rib dinner...Little Man decided to sleep through dinner...We went to Graeter's to celebrate PopPop's birthday....
  • Spaghetti & Meatballs: Yum, I used to not like meatballs, and these are so delish & enjoy making them and eating them even more!

What is for Dinner This Week: June 12 - June 18

Oh Happy Day!  We had  a great time with our subdivision BBQ on Saturday night.  I took Hub's fave potato salad (roasted poblano potato salad)Andrew & I went to the zoo on Friday with our MOPS group.  We had a good time, but boy was it HOT HOT HOT!  This week is going to be the calm before the storm...Little Man's 3rd birthday is the 22nd and we have family starting to trickle in on Thursday....

    I failed in a very big way this week with staying on track with our menu.  We made similar meals, but not what I planned for...I hope you enjoyed the recipes!
    • Grilled Pork Chops with Pearl Couscous Risotto  
      • YUM
    • Chicken or Steak with Balsamic BBQ Sauce  
      • Ok, so we did Parmesan Chicken with Vegetable Noodles instead. 
    • Roasted-Pepper Pasta Salad
      • Didn't make, Hubs was out to dinner on business, so Little Man & I ordered pizza....
    • Chorizo-Potato Tacos 
      •  We didn't want this either, so I made chorizo breakfast burritos with enchilada rice instead.
    • Coconut Curry Chicken Smoked Sausage Skillet
      • Well, we were unexpected invited to a backyard bbq in our subdivision, so this wasn't made either...
    • Dine Locally
      • We dined @ Fireside in Sellersburg and then had Greaters Ice Cream for dessert.  DELISH!
    • Korean-Style Marinated Skirt Steak
      • I made steak with Bobby Flays BBQ rub with noodles, corn and carrots.

      What is for Dinner This Week: June 5 - June 11

      Good Morning to you today!  I had a great week spending time with family & friends...I hope you have a fun filled week planned...I know some of these recipes are outside of most people's comfort zone of eating...our family's moto is try it and if we don't like it there is always a pizza that can be delivered.  You'll never know if you don't like something if you don't try it...

      After going back and reviewing last weeks menu, I really didn't make much of what was on our list...I didn't make the turkey pesto calzone.  We forgot to purchase the smoked brisket so we had turkey burgers.  I screwed up the cheesy potatoes & forgot to put the cheese in there.  I put the cheese on top and it was okay, but not like it should be...Hubs liked the potatoes!  We just made ravioli it was baked.  I didn't make the chicken wrap or Caesar salad.  I was really excited about making the drunken risotto, and it didn't happen either.  SORRY!  Little man was not his typical good self, so I was exhausted by the time to make some elaborate meal...and I forgot I had dinner out with girls.  Saturday we returned home from a Day Out with Thomas and was so hot, neither one of us wanted to cook...So, hopefully this week will go better!!!

        What is for Dinner This Week: May 29 - June 4

        Welcome to Memorial Day Weekend!   The BBQ chicken fajitas were good and a different way to use up some tortillas I had in the freezer.  We would make these again!  I opted not to make the chicken and rice bake because it took too long to bake...Sorry!  Sometimes, I just don't feel like baking something for an hour this time of year.  Instead we had pizza, requested by the Little Man!  The Asparagus Tagliatelle was good, but we felt it needed more sauce.  I would recommend using a pasta with ridges so the sauce adheres to it better.

        The Spaghetti Carbonara was very good.  I don't believe I've ever had it and I know I've never made it before.  It was very easy and delish.  After trying, Mark put the whole bowl in front of him and said he'll give me a few noodles; he is soooo sweet!  I did make a change, I added roasted garlic.  Mark says next time we should add some smoked mozzarella to the dish to make it better.  The nice thing, this recipe is lighter than what I've always heard about this dish.

        I'll make the chicken sausage for lunch today (Sat) or Sunday. I had to rearrange what meals we were having because what we thought was a Pig Roast at one of our fave restaurants, Fire Side, on Memorial Day, is actually being held Saturday...Life is about change and change is good!

        We had some pretty strong storms go through on Wednesday night.  I really wasn't prepared for the tornado which hit about 2 miles up the road from us earlier this year, so since I knew it was coming almost a full day in advance we were totally prepared.  We had water in the cooler & wine frig, lunch meat, bread, peanut butter, chips & dip, left over pizza in the cooler.  I made our extra bed up so we, all 4 of us (Hubs, Little Man, Mckenzee (a scottie) and Me), slept in a queen size bed in a nook in our basement.  The 3 humans slept at the top of the bed and McKenzee slept plastered to me at the bend in my knees with a pillow over her head.  You could see her hiney & her nose.  Thankfully, we didn't have any damage nor did we see any on our morning outing.  I did wake up to a beautiful deer eating in our front yard and a Cardinal in our back yard (it flew away before I could get a picture)...
