Sweet Tea Ribs, Lemony Potato Salad, Grilled Corn & Beer Bread {Saturday 5/1}

These sounds so yummy!  I can't wait for Saturday.  Oh boy do I wish we had our grill & smoker. 

Grilled Corn.
If you don't have corn on the cob, try fried corn.  It is a great way to spice up everyday corn or leftover corn.  Speaking of leftovers, check out the leftovers blog.

Beer Bread - We are using a mix from Tastefully Simple, my mother in law bought me.  Here is a copy cat version of the recipe for you to try.  Let me know how it tastes!  This time I'll be using leftover diet coke.  We don't drink soda, so instead of throwing it away I figured I would use it in the bread.

Homemade Pancakes (Saturday 5/1) DERBY DAY here in Louisville

Breakfast:  Homemade Pancakes...Ok no flak needs to be sent my way...yes we could make pancakes from a box or a jug, but here is a chance to make YUMMY delicious pankcakes with the kids...let them dump & stir.  If you don't want to get up early, make the batter ahead of time.  We haven't make them ahead of time, so let us know how they turn out.

This recipe is from the Food Network 50 pancakes.  Here is the basic recipe.  They are sooo stinking easy to make too!  We add either pecans or chocolate chips.  We aren't very adventurous when it comes to our pancakes, ok - I'm not!  I like mine plain with butter and that is it!  I had pancakes and sausage on my wedding day.

Chicken Enchillada Quesadilla, Mexican Rice, & Churros (Friday 4/30)

Ok, so I'm a little early for Cinco De Mayo, but Ole' anyway...mexican food is good anytime!
This has become a family favorite of ours.  Sometimes I will make re-fried beans, but tonight will be Mexican rice.  I'm not saying this is authentic rice, so please don't yell, but we like it this way and it is easy.

I take a package of frozen brown rice and follow instructions.  Then I throw in salsa & cheese, sometimes corn.  My husband always throws jalapenos in this and on the quesadilla.

For dessert we are going to have crescent rolls churros.  I haven't tried the recipe, but what could be better than crescent rolls with cinnamon & sugar to top off a deliciously easy Mexican meal...

BBQ Bacon Cheese Turkey Burgers with Grilled Steak Fries & Fresh Lemonade {Thursday 4/29}

We (typically) only use ground turkey for our burgers, if you don't, not a big deal. I will warn the novice turkey burger maker - you need to SPICE them up a bit otherwise they are very bland...It is a good time to play with your food, experiment and find what spices you like.  We like to add Famous Daves Burger Steak Burger Seasoning (should be able to find in your local grocery store). 

Make your burgers as you normally would.  Tip:  once you have your burger the way you want it, place your thumb in the middle and make an indentation, this will help keep it from bubbling up in the center.  Also for that oh so sought after melted cheese, place a lid over the burger till the cheese is melted.

Top with favorite BBQ sauce, Bacon, Grilled Onions & Cheese, etc. If you are feeling adventurous make it a "crunchified" burger.   This is taken from Bobby Flays Burger Palace and it just means add chips to your burger...it takes the burger to a whole new level!  Try it, you'll be addicted!

Have a side of Bobby Flays Grilled Steak Fries.  (This is the first time trying the recipe, so I am sure it is yummy!)  Has anyone been to his Burger Palace, it is a must stop if you are near one!

What You'll Need

6 large Russet potatoes, scrubbed
Kosher salt
1/4 c. canola oil
Freshly ground black pepper

What to do

1. Put the potatoes in a pot of cold water, add 2 tablespoons of salt,  and bring to a boil over medium-high heat.  Cook the potatoes until they are tender when pierced with a knife but still firm, about 25 minutes.  Drain, let cool, and then cut each potato lengthwise into 8 slices.  This can be done in advance; the potatoes can be kept at room temperature for up to 4 hours or refrigerated for up to 8 hours.

2. Heat your grill to high.

3. Brush the potatoes with the oil and season with salt and pepper.  Grill until golden brown and cooked through, 2 to 3 minutes per side.  Serve hot! Serves 4.

Perfect Lemonade Recipe

Ingredients

  • 1 cup sugar (can reduce to 3/4 cup)
  • 1 cup water (for the simple syrup)
  • 1 cup lemon juice
  • 3 to 4 cups cold water (to dilute)

Method

1 Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.
2 While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.
3 Add the juice and the sugar water to a pitcher. Add 3 to 4 cups of cold water, more or less to the desired strength. Refrigerate 30 to 40 minutes. If the lemonade is a little sweet for your taste, add a little more straight lemon juice to it.
Serve with ice, sliced lemons.
Serves 6.

Croissant Sausage Breakfast Casserole {Wednesday 4/28}

My husband LOVES breakfast for dinner.  So, I try to do this for him at least once every week or so.

This is a traditional croissant breakfast which I'm sure most of you have had in the past especially at brunches or church breakfast gatherings.  It transports Great, so if you are in need of taking something to a friend, brunch or to the office this is a great option.

The steak recipe is from the Food Network Magazine, I think October '09.

For the risotto, follow the recipe on the arborio rice container. Once the rice has absorbed the last of the stock add your cooked vegis.
