  • Sunday: Seriously Scrumptious Drunken Pork Chops with roasted vegis and caramelized onion mashed potatoes and vegis
    • These were really yummy.  I didn't have the dark beer, but I can see where it would be so much better if I had used it.  I just used what we had on hand.  
  • Monday: Leftovers
  • Tuesday: pancakes
  • Wednesday: Peppers and Sausage over Rice
    • I used chicken pesto sausage from Trader Joes. I sauteed the onions and peppers with the sausage and then topped the rice with the mixture.  Add salt and pepper for your liking.  
  • Thursday: Jalapeno Popper Stuffed Chicken
  • Friday: Steak Fajitas
  • Saturday: Chicken Parmesan Sub
    • Pretty Tasty!

week of august 12th

  • Sunday:  I picked up dinner at the grocery store...Sorry no recipe! 
  • Monday: Out to dinner
  • Tuesday: Sweet Corn Pasta with salad 
    • As usual it was very yummy!  Especially with the fresh corn!
  • Wednesday: Stuffed Peppers with salad
    • Since peppers are abundant right now so I was able to get huge red peppers for $1.  I caramelized some onions and a little red pepper.  I then added 1 lb of ground beef and 1/4 pound of mild Italian sausage.  While this was cooking, I cleaned and cut my peppers in 1/2 length wise.  (It is sooo much easier to fill, eat & cook this way).  Once my meat was done, I added my favorite spaghetti sauce along with salt and pepper to taste.  I placed a thin layer of spaghetti sauce in my 9x13 pan, then I placed the 6 pepper 1/2s in the sauce and placed into a 375 preheated oven.  I cooked for about 30 minutes.  They were delicious.  The peppers were soft, but still had a crunch to them.  YUM!!!!! 
  • Thursday: Burgers with sweet potato fries
  • Friday:  Out to dinner we had family in town....
  • Saturday: Spaghetti and Smoked Mozzarella Meatballs, salad and bread
    • amazing as always
  • Bonus Recipe
    •  Microwave Coffee Cup Scramble
      • I also added some caramelized onion and peppers from earlier in the week. This was nice and everything was done in the cup.  MAKE sure you spray the cup otherwise it will stick and you will have fun cleaning up.  I did 2 at a time and so it did take longer to make.  I stirred after every 30 seconds.

Week of July 29th

  • Sunday:  Smoked chicken with roasted poblano potato salad (DH favorite).
    • We did this slightly different...we didn't roast them, we smoked the poblanos, corn & potatoes. 
  • Monday: Salsa Chicken over rice 
    • Good!
  • Tuesday: Spicy Hawaiian Burgers with sweet potato fries
    • Really Yummy!
  • Wednesday: Pesto Pasta with Cast-Iron Skillet Focaccia
    • The focaccia was really good and easy!  I hope you enjoy it as much as we did.
  • Thursday: French Dip Sandwiches with salad
    • This was very yummy!  Can't wait to make again after I make my own French Onion Soup.
  • Friday: Out to dinner
  • Saturday: Chicken Sausage with fontina cheese and basil (Trader Joes) with pasta and vegis
    • YUMMY  to our tummy!

Week of July 22nd

  • Sunday: pancakes
    • Little Man was making them this morning in his kitchen, so we decided to actually make him some for dinner before we had Graeters ice cream for dessert. 
  • Monday:   homemade pizza
  • Tuesday:Mexican Chicken 
    • I modified this by only using 1 enchilada sauce and no jalapenos, but I did put some cumin, cayenne pepper and salt in there.  we served over brown rice without the flour tortillas.  About 20 minutes before we were ready to eat I put the cheese on top to melt.  It was good, I think I let the chicken cook too long (6 hours).  It seemed dry.  
  • Wednesday: Burgers
  • Thursday: Roasted Summer Vegetable Pasta
    • This was yummy.  
  • Friday: Taco Salad with leftover mexican chicken from Tuesday night
  • Saturday:  We went out to dinner because we had a $10 off coupon at O'Charleys.  MMM, O'Charley's rolls....

Week of July 15th

This menu was from when it was in the 90s and 100s.  So, these meals are cooked all without the oven.  Even though last week I did cook a pizza in a 500 degree oven. Yes, I still say I'm crazy!  

  • Sunday: Taco Salad
    • I used rotisserie chicken.
    • The box for the taco shell says not to use a toaster oven.  I decided  since it was 100 degrees outside & it feels like 105 I wasn't going to use the oven.  They turned out fine.  I think the biggest difference was they didn't get as flaky and golden.  We decided it was okey dokey to not have them as good as they would if we would have turned the oven on....
  • Monday: BBQ Chicken Calzones
    • I just used the recipe as a recipe starting off point. I really used crescent rolls and leftover smoked pork. 
    • We made these in the toaster oven.
  • Tuesday:  Barbecued Turkey and Cheese Panini 
    • good as always and a nice way to use a panini press or a griddle (which is what we used).  
  • Wednesday: Chef Salad
  • Thursday: Tortellini Alfredo with Roasted Peppers
    • It was yummy!
  • Friday: we picked up pizza, no cooking for this mommy the night before we head out of town. 
  • Saturday:  We were at Nana, Grammy and Aunt Jen's....We had hamburgers.

Week of July 1st

  • Sunday:  smoked ribs 
    • Sorry can't help you with this recipe....DH doesn't let me touch the smoker....but we got them from Preferred Meats.  They were yummy!
  • Monday: Out to dinner with out of town family
  • Tuesday: Pesto Chicken Pasta, salad with Garlic Bread
  • Wednesday: Leftovers
  • Thursday: BBQ pork pizza
    • NO pickles and added cilantro
    • This was yummy!
  • Friday:  Pork Chops, baked potato and corn on the cob in the crock pot
    • I feel as though the pork & corn were was dry.  Potatoes = YUM!  Great way to have baked potato in the summer.
  • Saturday: Hamburgers
    • grilled onions with pesto and mozzarella = YUM

Weeks of June 17th & 24th

Good Morning!    Sorry, this has been a crazy few weeks. My Little Man turned 4 on Friday.  We had a big party and family in from across the country (states:  NJ, MO, and CA).   I forgot to post last weekend and I even forgot what we ate a few nights.  I promise I will do better!!!! 


17th:
  • Sunday: Freezer Leftovers
  • Monday: I don't remember what we had...this seems so long ago! 
  • Tuesday: Hawaiian Turkey Burger with sweet potato fries
    • These were really good!  I didn't have teriyaki sauce sauce so I just added a tablespoon of honey.
  • Wednesday: Out to dinner with Nana
  • Thursday: Red Pepper Pesto Pasta with spinach salad
    • this is one of our favorite recipes!
  • Friday: Chicken Shawarma
  •  Well, I liked the chicken and not the sauce!  I think I've figured out I don't like tahini paste.  Hubs & MIL liked all of it! 
  • Saturday: I don't remember what we had...this seems so long ago!

Week of June 10th

  • Sunday:  Slow cooker cilantro lime chicken
    • It was YUMMY!  I modified this a little.  I added some chicken stock because it seemed like there wasn't enough liquid. 
  • Monday:  Turkey Burger with Sweet Potato Fries
  • Tuesday: Pasta (nothing spectacular)
  • Wednesday: leftovers because DH was out of town.
  • Thursday: Steak N Shake - DH was still out of town and my LM was such a good little boy I promised him a milk shake.  So, I just added dinner to the milkshake. 
  • Friday: Slow Cooker Pepper Steak
    • This was good.  I didn't use the cornstarch so there was a lot of liquid.  It was also good the next day for lunch in a quesadilla.  
  • Saturday: Gemelli with Asparagus and Caramelized Onions
    • this was delicious and very easy to make!!!!

  • Sunday:   Ground Turkey Stroganoff
  • Monday: DH smoked a pork loin.  Friends brought potato salad.  I made cold pesto pasta salad & french bread rolls.  Dessert was smores.
  • Tuesday: Italian Sausage Pizza (crust from Trader Joe's)
  • Wednesday: Waffles 
  • Thursday: Picked up dinner
  • Friday: steak with mexican rice and black bean salsa (corn, black beans, cilantro, lime juice, salt, cumin, green chiles)

Week of: May 27

I hope this post finds you well at the end of another week...

  • Sunday: Penne with Roasted Asparagus and Balsamic Butter
    • This was so yummy and our guests had heard how yummy it was so they requested it for dinner.  OH darn - 2x in a week.... 
  • Monday: Pancakes/Waffles (we need to fill up Andrew's breakfast stash)
  • Tuesday: Queso Fresco Beef Rolls with Chipotle Salsa
    • We made this a little different.   We didn't do the salsa....We liked it.  I don't like tomatoes - SORRY!
  • Wednesday: Pizza (crust from Trader Joes) - cook crust on pizza stone at 500 degrees for 5 - 6 minutes without any toppings.  Then pull it out and flip the crust over and add fully cooked toppings.  Cook till cheese is melted at lease another 5 - 10 minutes
  • Thursday: Sundried Tomato and basil Chicken Sausage (from Trader Joes) Pasta
  • Friday: Green Chili Burgers - always yummy.  Sorry, I cant tell you how to make it; we just dumped ingredients in and cooked.  Though, I will give you a bonus recipe  - French Bread.  I made this & cleaned up in 45 minutes.  This does exclude the rise time (30 minutes) and baking time (25 minutes).  I made this into 1 loaf & 4 rolls.  Next time I will cut the rolls smaller in order to get 6.  This was so good and so easy!!!
  • Saturday: we had fried egg sandwiches

Week of May 20th


Welcome to another week!  I hope all of you had a wonderful Mother's Day!  My Boys took care of me very well!

  • Sunday: DH made pancakes and bacon for breakfast.  Then he made me pork chops and carrot risotto. Then topped Mother's Day off with a chocolate flourless chocolate cake! 
  • Monday: Burger and Brocolli slaw
  • Tuesday: LM requested to go to Chuys for dinner...it was yummy!
  • Wednesday: Penne with Roasted Asparagus and Balsamic Butter
    • this is so YUMMY delicious....it was also very easy!  We didn't put as much butter in as the recipe calls for, but I will have to say it brings a silkiness to the pasta dish.  Great way to have a healthy pasta meal without the tomato sauce!  I'll be adding this to our favorites page.  This would be one of those dishes to pull out of your back pocket when you have company coming over for dinner. You could have chicken, steak or fish with this or a no meat meal!  They will think you are a superstar in the kitchen!
  • Thursday: None  of us were very hungry so we had appetizers later in the evening...
  • Friday: Breakfast Enchiladas
    • So, as usual I'm modifying a recipe....DH doesn't like ham, so I used sausage...I also didn't buy hasbrowns, I just threw a potato into the food processor and wam bam thank you mam I have hashbrowns!  WOW, that was so hard....
  • Saturday: Went to dinner at Shack in the Back with Mimi and Big Popop 

    • Always a yummy treat...the meat is smoked for 14 hours and the sides are homemade.  The ribs fell off the bone.  The service is over the top even though they were very busy!  They were telling people it could be upwards of 45 wait for the food, but it sure wasn't.  They had a band there and it was very full, thankfully a nice couple allowed us to take over their table.

Week of May 13th

This week I'm cleaning out the freezer...So, we shall see what I can create!  
  • Sunday: Ravioli and salad
  • Monday: Our house guest took us out to dinner....she is so sweet!
  • Tuesday: Burgers and fries
  • Wednesday: Spicy Chorizo Pockets
    • These are a family favorite!  I made this time with croissant rolls and it worked SO much better!
  • Thursday: Went to dinner.  We had a groupon for Mazarella's.  It was ok, but my goodnesss it was dirty in there...We wont be returning!
  • Friday: We took a coworker of DH's home and LM wanted McDonald's for dinner.  So, we conceded and ate it in the car...
  • Saturday: DH made Pizza



    Week of May 6th

    • Sunday: Spicy Thai Noodles with Rotisserie Chicken
      • Since there is only 2 of us eating this meal, I scaled down the sauce to 1 T red pepper flakes, 1 T of sesame oil, 1 1/2 T vegetable oil, 1 T honey & 1 T soy sauce.  I would recommend doubling my recipe for 2 people.  This was very yummy!  We really enjoyed it!  You could add meat and vegis to it also.  This is definitely a winner in our book it was yummy, fast & easy!!
    • Monday: Jalapeno Popper Stuffed Chicken
      • These were very yummy!  I did 1/2 the recipe since there is only 2 of us that would eat this.  Though DH did say he would like more jalapenos.  I paired this with roasted asparagus and rice with broccoli and cheese.   
    • Tuesday: Burger and Broccoli Slaw
    • Wednesday: We went out to dinner to see some of the hats from the Oaks festivities.
    • Thursday:  Pork Chops with noodles and roasted asparagus
    • Friday: Sweet Corn Pasta
      • This was good...messy to make because of the removing the corn from the cob.  It was good cold too!  
    • Saturday: Leftovers
    • Bonus:
      • Waffles - We have found the perfect waffle recipe.  It is crispy when you first make them and they are crispy when you reheat (after being frozen) in the toaster oven.

    Week of: April 29th

    • Sunday:  We went out to dinner to use a coupon at what used to be one of our favorite restaurants.  The food and the service sadly has gone down hill. 
    • Monday: Steak, Asparagus and Chimichurri Pasta
      • We didn't have asparagus because our grocery store sent their asparagus delivery back because it wasn't good.  So, we used zucchini.  It was yummy!!!! You could do away with the red pepper flakes. 
    • Tuesday: Turkey Burger
      • DH always makes the best burgers! 
    • Wednesday: Jamie's Huevos Rancheros
      • These were yummy!  I forgot (OPPS) to buy chorizo.  I thought we had some.  My sous chef DH helped make the sauce a lot better with lime juice, garlic, pepper and other things.  It was way tooo tomatoey for me.  
    • Thursday: Ground Turkey with Pasta sauce  
    • Friday: Ordered pizza because it was late by the time we go to dinner. 
    • Saturday: Southwestern Stuffed Peppers
      • These were really yummy & very easy!  We decided to spice them up a bit with some chorizo, which we really enjoyed!  DH also added more spiciness to his pepper.  We loved the ease of filling & eating the peppers since they are cut in 1/2 instead of filled from the top.   It was also nice to precook the peppers a little while I was making the filling.  Same amount of cooking time as normal, but we were able to make the filling while it was precooking.

    Week of: April 22

    • Sunday: Spanish Chicken with chorizo and potatoes
      • Oh my gosh, this is cooking and it smells so yummy delicious. 
      • DH made this a little different than the recipe.  He sprinkled some salt & pepper on the chicken as well as some paprika.  Next time he will also had some salt & pepper to the potatoes.  He also just put everything in one pan and stirred it at the 1/2 way point.  
      • NOTES:
        • gas mark 7 = 425 degrees
        • 750 g = 1.5 pounds of chorizo
        • 1 kg = 2.2 pounds
    • Monday: Pesto Pork Chops and orzo
      • It was yummy!!!!
    • Tuesday: Green Chili Turkey Burgers
      • DH made his own version of green chili turkey burgers.  So, sadly I cannot  comment on how good/bad this recipe is. 
    • Wednesday: crunchy garlic chicken
      • DH made this for us since I'm still dealing with allergies and in no mood to make dinner.  Thank goodness I was blessed with a man who can and likes to cook!
    • Thursday: Restaurant Style Carne Asada Soft Tacos with Guacamole and Corn
      • This was good.  
    • Friday: Baked Sausage, Peppers and Onions with Orzo 
      • This was good also.  I did modify because we didn't need all this would make.  So I halved the recipe and did it in the skillet. I mixed everything together except the cheese and let the chicken stock cook out.  Then I added the cheese to the top and let it melt on the stove and voila - NO oven!
    • Saturday:  Pizza!!!!!  with Trader Joes Pizza Crust - MMMM
      • We made a Sundried Tomato and Basil Chicken Sausage (Trader Joes) with Pesto on Herbed Crust (Trader Joes)  Pizza.   It was yummy!

    Week Of: April 15th

    • Sunday: We ate Easter BBQ at my Mom's.  I made our favorite Poblano Potato Salad.  DH was hoping no one would eat it so he could have the leftovers.  Unfortunately, there was only 1 small spoonful left. My sister doesn't like mayo, so instead of the may I added an additional 1/4 cup of sour cream.
    • Monday: picked up food on the way home from St. Louis
    • Tuesday: Michael Symon's Mac and Cheese with Roasted Chicken, Goat Cheese and Rosemary with spinach salad.
      • This was delicious.  I think  next time I will leave the goat cheese out.  It seemed to heavy.  I used 1/2 & 1/2 instead of the heavy cream.  It took a little longer to reduce, but it was still worth it!
    • Wednesday: Maple-Bourbon Grilled Thick-Cut Pork Chops with baked sweet potatoes
      • Absolutely yummy delicious!
    • Thursday:  Turkey Burgers with sweet potato fries
    • Friday: Basic Pancakes with a twist....I separated the yolks & whites and then whipped the whites then folded in the whites.  This will be the way we make from now on!  Little Man ate 8 silver dollar pancakes.  This is the most he has ever eaten.  He asked for more, but there weren't any.  DH said these are the best he has eaten minus the crispy edges you get at restaurants.  
    • Saturday:  Grilled Chipotle-Rubbed Steaks with Lime Butter with garlic and caramelized onion mashed potatoes.  
      • This is yummy and will be added to our family favorites.  Thankfully, we only put the rub on 1 side of the steak.

    March 25 - March 31

    • Sunday: Cuban-style (Turkey) Burgers 
      • Yummy
    • Monday: Gouda-Stuffed Cajun Pork Chops with Caramelized Onions
      • Yummy.  I used Havarti and it wasn't as good as it was the first time with the gouda.
    • Tuesday:  Out to dinner.  
    • Wednesday: Melt in Your Mouth Chicken Breast  with Slow Cooked Macaroni & Cheese
      • Well, the chicken tasted good, but it sure didn't look like picture on the link.  Granted I did bake in the toaster oven, so it could be the issue.  It was tasty.  
      • The Mac & Cheese needed more cheese and not cheddar....it was okay.  I'll keep working on it.  I also didn't cook the macaroni as directed on the package.  I cooked it for 5 of the 7 minutes.  I didn't want it to be over cooked after the 2 hours in the crock pot. 
    • Thursday:  Pasta
    • Friday: Leftovers
    • Saturday:  
      • Breakfast:  Waffle House Waffles- Copycat
        • these are about the closest I've come to the best at home waffles....
      • Dinner: Appetizers (while watching the UK vs UL game)

    March 25 - March 31

    • Sunday: Leftovers, sometimes you just have to clean the fridge out 
    • Monday: Pasta with Roasted Garlic Sauce.  I screwed up the original recipe, so I had to move to plan B. 
    • Tuesday: Buttermilk Waffles  courtesy of America's Test Kitchen
      • These are better, but still not as crispy as I like.  I do like the lightness of these.  We will start playing with this recipe to try and get them crispier.  
    • Wednesday: Roasted Garlic Chicken Pizza
    • Thursday: Out to dinner, needed to use our Zaytun's Mediterranean Seize the Deal certificate before it expired (tomorrow). 
    • Friday: Lasagna with Garlic Bread, dropping a pan off at a friends house who just had a new baby girl. Welcome Annabelle! 
    • Saturday: Benihana Hibachi Meat with Benihana Fried Rice
      • So it wasn't exactly like Benihana, but it was good.  I think the rice was missing something.  We didn't use the apples with the meat.

    March 11th - 17th

    Welcome to a new week.  Can you believe this weather.  This week it is going to be in the 70s.  I'm a little worried what it is going to be like this summer. 
    • Sunday: Steak Bites (beef tips) with Almost hands-free risotto with parmesan and herbs america's test kitchen with roasted asparagus 
      • This was yummy and we will be using this method for risotto from now on.  Though we did not use the water or the wine in this recipe.  
    • Monday:  Tried another waffle recipe, I still am not happy....
    • Tuesday:  Chicken Philly Sandwich 
    • Wednesday: Baked Shells with Pesto, Mozzarella, and Meat Sauce with spinach salad 
      • You can use any type of noodle for this recipe.  I used jar sauce, but made my own pesto.   It looks a little funky.  I mean, come on, red & green mixed together....but it was yummy!
    • Thursday: Went out to dinner with friends.  Wow, did the kids have fun together! So, did the adults....
    • Friday: Leftovers
    • Saturday: Slow Cooked Sweet Barbacoa Pork with Black Beans
      • This was yummy!  A bit messy though.  I did make some changes to the recipe:  I didn't have tomato sauce (opps).  I had diced tomatoes; so I used the juice and some of the tomatoes.  I also didn't have a chipotle chile so I used dried chipotle pepper.  It was a sweet & spicy meal.  We really enjoyed this and will definitely head to the family favorite page. 
      • TIP:  I purchased a 4.5 lb pork loin.  I then cut it in 1/2 and used for dinner.  I took the other 1/2 and sliced into 4 nice thick pork chops and 2 smaller ones for the little man & DH's lunch.  
      • We had this for leftovers on Sunday lunch and heated it up in a pan.  We cooked all of the liquid out and it was even better!  I hope you enjoy as much as we did!

    March 4th - March 10th

    Hello Everyone.  I hope you all had a safe week and you safely made it through all of the wonderful "winter" weather we have had lately.  Last weekend we went to the Maple Festival, so there are a few items this week based on maple syrup.   We learned how to make maple syrup from The Sugarbush's Maple Festival.   

    • Sunday: Pancakes
      • We didn't have any AP flour, but little man was begging for pancakes so I used bread flour and it worked very well...we feel they were lighter than normal. 
    • Monday:  Went to Chuy's so DH could have the "hot" sauce that they only have on Mondays. 
    • Tuesday: Balsamic Maple Glazed Pork Chops
      • So, time was not on my side tonight....with that being said I pan seared the pork chops and glazed the chops with maple syrup.  It was yummy.  I hope you try the recipe listed.  I know I will be soon. 
    • Wednesday:BBQ Cheesy Chicken Aka Chili's Monterey Chicken
      • Alicia this one is for you!  These were yummy! 
    • Thursday: Chicken Enchiladas with black beans 
      • They were better than normal because I found a shop near the house that makes fresh corn tortillas at Super Corn Tortilleria (only open 4-7), 2 dozen for $1.25.  
    • Friday: We had Hing Wang's Chinese for dinner due to I was preparing for the tornadoes early in the day and we were in the basement most of the afternoon and some of the evening.  So, we decided on take out. 
    • Saturday: Pizza

    February 19 - 25th

    • Sunday: Spaghetti 
    • Monday: Chiles Rellenos with Smashed Black Beans 
      • OK - Do NOT do these on a week night when you get home at 6 and are starving.  They are a little tough to make.  Please Please Please read & understand the recipe before you begin making these little doozies, you will thank me!  We ended up just stuffing them and putting them back in the broiler till the cheese melted.  We also added some chicken to the cheese corn mixture.  They were good.  
    • Tuesday:  Cocoa-Rubbed Steak With Bacon-Whiskey Gravy with crispy baked potatoes & roasted vegetables 
      • We didn't make the bacon whiskey gravy.  We thought these were ok, but we think the problem was that our grill wasn't hot enough so the cocoa and  brown sugar didn't caramelize. 
    • Wednesday: Baked Fried Chicken with vegis
    • Thursday: Philly Turkey Burger
    • Friday:  We were out of town...We had dinner with my parent.
    • Saturday: We were still out of town....

    February 5 - 11th

    Welcome to February! 
    • Sunday: Grilled Balsamic Flank Steak and roasted root vegetables
      • Oh this was soooo yummy!  We used Espresso Balsamic from Di Olivas.  I would have never guessed the steak would have just a hint of coffee just beyond the slightly sweet flavor.  And who doesn't love roasted root vegis....
    • Monday: Cuban Turkey Burgers with salad
      • Delish!
    • Tuesday: Asiago-Crusted Pork Chop with roasted asparagus
      • these were so yummy!
    • Wednesday: Chicken & Vegis
    • Thursday: The Boys are on there own!  I think they will be making pizza!
    • Friday:  Out to dinner - Kids eat FREE @ IHOP + we have a coupon for $5 off
    • Saturday: Hymilayan Salt Block Dinner with caramelized carrot risotto
      • this was all yummy!

    January 29th - February 4th

    Welcome to a new week.  Not to many new recipes for you this week.  I will get back to new recipes this next week.  
    • Sunday:  Out to dinner with family who were in town
    • Monday: Leftover Seared Flank Steak on Himalayan Salt Block and Mashed Potatoes with Caramelized Onions and Goat Cheese
      • Everything froze nicely...I put the potatoes in a container and covered with plastic wrap tightly then I added the steak in an aluminum foil packet on top of the potatoes.  
    • Tuesday:   Waffles and bacon
      • We didn't care for this waffle recipe...though I didn't have the lemon zest.  We didn't care for the texture, they were chewy.  Will try another recipe next week since we have a LM who eats waffles every morning and now that we have a waffle iron we need to keep his stash up. 
    • Wednesday: Pasta with Vodka Sauce (jar), leftover garlic bread and salad.
    • Thursday: Out to dinner
    • Friday: Goat Cheese with caramelized onion turkey burger and pretzel rolls with spinach salad
    • Saturday: Roasted Garlic and Pesto Pizza on Trader Joe's Garlic and Herb pizza crust

    January 22nd - 28th


    • Sunday: Bobby’s Lighter Baked Spaghetti
      • This was good, since I'm not a fan of full flavor tomatoes next time I will use my favorite jar sauce.  Otherwise, it was yummy!
    • Monday: Chimichurri Steak Fajitas 
      • These were yummy to our tummies!  Even Little Man liked the steak - which isn't normal!
    • Tuesday: Out to dinner
    • Wednesday: like Max and Erma’s® Soup
      • This is just like Man and Erma's soup...since the ones here in L'ville closed, this is the best I can get till we head back to STL for a visit.  
      • I had to boil this at the end to get it thicker. 
      • I've read that some people puree' the Rotel first, I didn't....next time I will.
    • Thursday: DH sauteed some pork chops with a smoke chipotle sea salt and we added roasted vegetables round out the meal.
      • These were delish!  You can get the salt from Di Olivas
    • Friday: Turkey Burger with leftover Max & Erma's soup on a pretzel roll with the perfect french fries
      • We just added a can of green chilies to the burger along with some salt and pepper.  These were very yummy. 
      • Pretzel Roll:  I think next time I'll be making 6 of these instead of the 4 the recipe states.  They were tooooooo big!  But, they were good!
      • French Fries were top notch!  DH even made his own salt toppings some had cayenne pepper, some had cumin - have fun!
    • Saturday:  Family Visiting Requested - Michael Symon's Mom's "Bellybuster" Lasagna, Salad, Garlic Bread, Tiramisu

    January 15 - 21st

    Hey There!
    I hope you had a fabulous week!   We had company last week, Sunday & Monday of this week.  So, Tuesday was a night of pick up dinner and sit in our pjs the rest of the night while vegging in front of the tv.  I am sure you understand! Then on Wednesday night DH had a business meeting so LM and I had leftovers. 
    • Sunday: Out to dinner
    • Monday: Burgers
    • Tuesday: Steak N shake
    • Wednesday: leftovers, since DH is at a business dinner.  So it is just me and my little man!
    • Thursday:Garlic Parmesan Crusted Pork Chops paired with leftover noodles from DH's dinner and roasted carrots.
      • These were yummy!
    • Friday:   Chili - sorry I don't have a recipe, but it was yummy delicious.
    • Saturday:  Request from DH: Better than Best Fried Chicken
      • As you know this is one of our family favorites and I will only make it every couple of months, since it isn't very healthy.
