Chicken Salad Panini's
- Take your left over chicken from Monday Evening.
- 1/4 c of medium onion, chopped fine.
- 1-2 ribs of celery, chopped fine.
- 2-3 Tbsp Real Mayo (more if desired)
- Salt & Pepper to taste
- Your favorite sourdough bread or peasant type bread.
- Olive Oil to brush on your bread.
- Mix chicken, onion, celery, mayo, salt & pepper. It will be best if you let sit overnight to marry the flavors.
- Slice your bread.
- Brush your olive oil on 1 side of your bread slices.
- Grill on your panini press.
Serving Suggestions: Grilled Vegis, Spinach Salad
