Chicken Salad Panini's (Thursday)

Chicken Salad Panini's

  • Take your left over chicken from Monday Evening.  
  • 1/4 c of medium onion, chopped fine.
  • 1-2 ribs of celery, chopped fine.
  • 2-3 Tbsp Real Mayo (more if desired)
  • Salt & Pepper to taste
  • Your favorite sourdough bread or peasant type bread.
  • Olive Oil to brush on your bread.
  1. Mix chicken, onion, celery, mayo, salt & pepper.  It will be best if you let sit overnight to marry the flavors.  
  2. Slice your bread.  
  3. Brush your olive oil on 1 side of your bread slices.
  4. Grill on your panini press.
Serving Suggestions:  Grilled Vegis, Spinach Salad
